Um, two southern schools playing a bowl game in the South in a snowstorm is pretty memorable from novelty alone. It also was an entertaining game that was a typical RC "snatching defeat from the jaws of victory" type of thing.

The Dallas/Miami Thanksgiving game was also well remembered by football fans, it didn't mean much either (other than showcase how stupid Leon Lett was).
