I saw a thread that mentioned Steve McNair passed on LSU.

Johnny football/rg3 and Texas are good recent ones.

Any others that stand out?

Didn't do much in the pros but SC had Kenny Irons on our roster, Holtz let him go to get a big time in-state recruit by the name of Demetrius Summers who would soon become a huge bust.
