Happened once before in the championship game and several other times with rematches in bowl games. Just to name a few:

1997 Sugar Bowl: Florida avenges regular season loss against FSU to win National Championship

1995 Sugar Bowl: FSU breaks the '94 regular season tie by beating UF in the rematch (this was the first Sugar Bowl played that year on Jan 2nd; there was another that year played on New Year's Eve following the '95 season)

1979 Orange Bowl: Oklahoma avenges regular season loss to Nebraska

1960 Sugar Bowl: Ole Miss avenges regular season loss to LSU & Billy Cannon

Those are just the bowl games I can recall off the top of my head...pretty sure there were others...

But as for sayin' that CFB is not a sport where opponents play more than once, you must also take into account conference championship games:

1999: Bama beats UF twice, once in the Swamp and once in the SEC CG

2001: LSU avenges a regular season loss to UT in the SEC CG

2003: LSU beats UGA twice

2009: Ga Tech beats Clemson twice

2010: Auburn beats SCe twice

2011: Happened twice in CGs. Clemson beat Va Tech for the second time in the ACC CG while Wisconsin avenged a regular season loss to Mich St in the Big 10 CG...looks like 2011 was the year of the rematch...

2012: Also happened twice. Stanford beats UCLA for the second time in 6 days in the PAC 10 CG while Wisconsin once again avenges a regular season loss, this time against Nebraska in the Big 10 CG...

Again, there are probably others, but these were the most prominent...

So while in b-ball, rematches are much more likely, they're not as rare as you'd think in football, especially with the advent of the conference championship games...
