Shouldn't an 8-4 SEC team get a little better bowl bid than Weedeater or Liberty?

no because all the other SEC schools finished better.

Should, but bowls quit being about rewarding teams long ago.
If I had my way, here's how it would go down:
BCS Games: SEC Champion, Alabama
Capital One - SEC Championship Loser
Cotton Bowl - South Carolina
Outback Bowl - LSU
Peach Bowl - Texas A&M
Gator Bowl: Vandy (by beating UGA)
No other bowls would exist. 8-4 should be the minimum, and not a guarantee.
But if I had to go all the way:
Music City Bowl: Georgia
Liberty Bowl: Ole Miss
Compass Bowl: MSU
