Not that I disagree with you but he probably felt more comfortable using Petermen in that environment than he did a couple of ultra-green freshmen (Petermen has at least seen the field) also I'm sure he would prefer not to burn either of the freshman's redshirt if possible so you go with Petermen.
Obviously now that Petermen is injured one of their redshirts will likely have to be burned

to me, UT has no identity on offense... it's like they're a passing team with crap QBs and WRs... I'm not really sure what Jones is trying to accomplish.
Just my opinion, but he should've developed the running game more in the spring and fall camp... pound the ball with the big OL. Whatever they've been doing thus far isn't working for any position group.
