Around 2004, there were several good internal changes made within the Saints organization regarding their marketing. Couple that with all the events of Katrina (national sympathy for the city/team and the subsequent unity of the team/city/fanbase) and a SB winning season, the Saints acquired alot of fans who were not previously affiliated with a NFL team. Americans love underdogs and feel-good stories...prior to the 2009 season, the Saints were both. I don't think it has much of anything to do with converting Cowboy fans.

Also around that time is when sports packages became available to watch any team in the country on your TV instead of only the local teams that are always shown.

Now I can follow the Seahawks (for example) and watch every game instead of only the ones when they play the Chiefs or Cowboys (my market's regional teams, plus they show almost every Steelers game for some reason in this area).
