If only "Leonard Nimoy Should Eat More Salsa" were still around you'd have 150 great recipes.

That's simple and it's money.
Let it sit for a day or two in the fridge and KAPOOYAH!

Yup, no need to mess with the original. Although a little twist is to roast the tomatoes and peppers, and or sub in some roasted corn or pablano.

Mango/Habanero salsa
1 mango
1 Habanero seeded, and pan fried in canola oil.
1/2 a cup of Cilantro
1 tblspn Fresh Lime juice
Half an Onion
Clove of Garlic
1 tomato cubed
Salt and pepper to taste.
Cut the mango into cubes. Best to slice it in two avoiding the seed in the middle. The slice verticals and horizontal lines down the flesh of the mango. Make sure not to tear the rind. Next simply push the rind outwards and slice the cubes off.
Dice the cilantro and mince onion and the garlic
Slice thin the habanero, but know that while frying it has diminished much of the heat the bold citrus flavor still exists with plenty of heat.
Mix in the lime juice and season to taste. Serve on fish tacos, chicken or marinade seafood for the grill.

That sounds delicious. Except for the fish part.
It reminded me of another good salsa too.
Peach Salsa
4 medium peaches, peeled and pitted
2 large tomatoes, cut into wedges and seeded
1/2 sweet onion, cut into wedges
1/2 cup fresh cilantro leaves
2 garlic cloves, peeled and crushed
2 cans (4 ounces each) chopped green chilies
4 teaspoons cider vinegar
1 teaspoon lime juice
1/4 teaspoon pepper
In a food processor, combine the peaches, tomatoes, onion, cilantro, and garlic; cover and pulse until coarsely chopped. Add the chilies, vinegar, lime juice and pepper; cover and pulse just until blended. Transfer to a serving bowl; chill until serving.

If you have a grill, look in to a recipe where you get grilled tomatoes and peppers in there. My uncle does one and it is awesome.
