Some for USC that haven't been listed yet:
Charles Frazier, author- Cold Mountain. Though he went to undergrad at UNC, he has his PhD from USC and wrote the book while on campus in Columbia. That's gotta count.

Allen Stephenson, founder of Southern Tide
Rita Cosby, newscaster
