I think you have to look at guys like Kirby Smart (who will get a better offer), or another defensive coordinator at a good program (Chavis comes to mind), or even a NFL coordinator like Mike Zimmer.
I think if we go with a gimmicky offense, we will end up like the Mumme years and won't win anymore games, albeit they will be entertaining.

As far as the Outback bowl conversion, that was due as much to Tim Couch's heisman hype as the team. As I recall at 7-5 we passed over a couple if 8-4 teams because of Couch, not Mumme.

Then my next question is where does the defensive talent come from?

Even though it hasn't looked like it this year, I think there is some decent young defensive talent. Williamson and Dupree are solid, and if nothing else the freshmen defensive backs can only get better.

Obviously without saying recruiting is the key. We have to start competing with something other than MAC teams for talent. I know we won't win recruiting battles with Bama and LSU, but I think as Cheese Grits pointed out, we need to steal some recruits from up north, as well as areas like Mississippi and Texas.
A named coach, whether he be a current coordinator or HC somewhere can recruit to UK I think.
The biggest hurdle is that there is no talent instate, or at least not much.

Look at Charlie Strong. He has ties to Florida and has brought some talent to Louisville, which should be a harder recruiting school than UK. I think it can be done, but a solid hire is necessary.
