Never once heard anyone refer to Jalen Hurts as "low IQ" while he was at Alabama, period. People questioned his field vision due to his height, sure. Some even questioned his ability to make all the throws for his first year or two. He worked hard, and improved while at Alabama, and was beloved for his grit. He put up bigger numbers at Oklahoma for three reasons. The defenses in the Big 12 sucked compared to the SEC. He stayed in for entire games at Oklahoma instead of a half, or maybe 3 quarters, in games at Alabama. He had to put up bigger numbers to win at Oklahoma.

And he was ready to do it after playing at Bama and getting the work ethic instilled in him.

Sure, it's easy to nit-pick at Saban at this moment and sure, give Riley some credit for developing him just a bit more but you do have to give Bama some credit for getting Hurts ready for his time at Oklahoma.
