Since we are diving into this subject head first, is there a difference between the spices that the prairie Cajun folks use as opposed to the spices that the swamp Cajun folks use?

I’d imagine if there’s a difference it would be similar to the spices used for meat, pork and poultry vs seafood since they were also cattle farmers. But I’ve never noticed a big difference.

There is no such thing as a “prairie Cajun”. People north of Alexandria are merely country folks and their food and way of life reflect that
