Anybody planning out their tailgating food... or @ home food?
Here is one for the BAMA vs PIG day.
I will cut up into small pucks sausage:
Any of these will work. I prefer something with a KICK, like Andouille Sausage.
Now I take bacon and wrap it around the puck and pin it. This leave a hole for stuffing it.
- Now cut up into small cube (small enough to fit into the hole/cup of the puck) your favorite cheese. I use pepper jack or Cheddar. Then drop the cube into the puck.
- Next mix up Cream cheese and Cajun seasoning and place in a zip loc back. You can place in a microwave for maybe 10 seconds to help squeeze it out in to the puck.... Cut a small section of the corner of the zip loc.. and squeeze it into the puck. fill it up.
At this point, you can smoke them.. OR you can top them with anything you want.. diced onion... hash potatoes.. etc. but finish with Cajun season.
This will take about 1.5 hours to smoke until the bacon is crisp.
Twords the end I do add a sauce... but it's mine and I aint sharing it.
So let's get to it. What you got!?
Hint, use a thicker bacon so that it will hold it's form and separate it and put it in the freeze for an hour.

I'm going to run through a bojangles on the way to see UGA beat the shite out of Saban's alma mater on Sep 24th and probably pound a few Tropicalia's at Walkers before the noon kick.

Serious question- do you or your Aubren Fambly ever eat at Cane's? Because if so, you are supporting Stetson Bennett.
Also, thank for reminding me Bo Nix plays for Oregon, so we can dawg-hump him all day in the backfield again in our opener.

I always, always use Kielbasa for everything sausage related...unless I'm making hotdogs or boudin.

There’s no bojangles in El Paso, unfortunately.

I'm sure Bojangles was thrilled about that hashtag.

In all seriousness, this actually sounds delicious.
Are there any pictures online of what this looks like finished, maybe with different toppers?
Seems like it would be really tasty and not too messy to handle, which is ideal for a tailgate.
