Vegas does not try and predict the score of a game, they try to get even money on both sides and guarentee a profit off the vig.
if we play our game we blow Texas out of the gym. Just my take, every pundit I've see has us winning bigly. Was just curious why you picked Texas.

We'll see. LSU doesn't play especially tough defense and Texas does have some scorers. LSU should control the boards but with it being in Austin I anticipate there being a tight whistle on the boards
And Vegas absolutely is trying to set the spread at around what the consensus is. If every expert actually thought LSU would win big league then the spread would reflect that
