Ole Miss is scoring a lot, but giving up a lot - they're ranked 76th in points allowed per opponent offensive drive, worst in the SEC, just below Missouri (75th).
By comparison, Mississippi State is ranked 17th, meaning their defense is better per-drive, and in fact third best in the conference behind Georgia (12th) and Arkansas (16th).

Now do one with more than five 4-stars on the opposing defense and also more than five 4-stars on the opposing offense.

Are you just trying to say Clemson hasn’t played anybody with a pulse? If so, I agree.

yeah that 12 points Notre Dame scored on Louisville's powerful defense was impressive.

Clemson will remain at or very close to the top so long as they're in the ACC.
