I completely disagree. That’s like arguing that Italian food can be just as good in Boaz, Alabama as Rome.
Location matters immensely. The culture and process are paramount.

It's ok for smoked chicken maybe once a year. Doesn't work with anything else.

Arguing over what places have restaurants that make it better is just really dumb. The pulled pork you get in those places is the meat that gets eaten last in my house, usually thrown away when it's just the wife and I.
I just don't generally buy pulled pork from those places. You need the sauce because you aren't getting the meat with all the good bark except in low amounts because they are trying to make the most money which means selling all that middle unflavored meat. I don't even like to smoke a butt over 6lbs.
Ribs I would order, because those are usually really fricking good. But again you can't really compare that with what I make at home, where I'm using the recipe and ingredients I want. I do generally put KC style BBQ sauce on my ribs, and no where near the amount of rub I would use on a pork butt.
You're just all about stanning this restaurant or that one, rather than the actual methods that come from the areas. Places all over use those methods and that's not even counting people who do it themselves.
I can tell just by the smell outside if the place has good BBQ or if they are just getting by on temps and sauce.

It's probably better in Boaz. Authentic Italian food is not very good.

Hard to smoke it better than what you get at some of these old restaurants. The smokers have been cured for years and the good ones will smoke the meat for hours at a low temperature. Those Yankee places you are probably used to will cook it quick and smother it with sauce.

Good pulled pork is slowed cooked also and has a good rub before the process starts. Fat makes a good BBQ. You will not see fat on the ones they cook fast because it is nothing but gel after a quick cook.

Ribs are better cooked on a grill. Smoking them drys them out and even at restaurants the boil them first to speed up the process. I can eat the Dreamland original ribs, but Archibald's taste like lighter fluid. Beef ribs are good cooked slow because of the fat and the bone.
Again, location, location, location.
