IMO charcoals the only way. Still using a Weber kettle I won.

I agree charcoal kicks arse but gas is not too bad. convenient and decent alternative

Same grill can burn either charcoal or wood, so burn both, at the same time, for true success.

Apple, pecan or peach wood all work well and offer-up a ton of flavor if you can keep the smoke heavy and the heat down and you have a little patience.

I despise gas - it is for rookies.

When you use wood with coal, be sure to soak that wood overnight, get it good and saturated, and use just enough to make heavy smoke ... remember, the coal is for heat, the wood it for eatin' .... it's where the flavor comes from that is infused into the meat.

Charcoal tastes exquisite, but can give you heartburn. Gas rocks in 20 degree weather and cooks more accurate with a thick rack. Never used wood alone, but have added pecan limbs to charcoal.. Good stuff.

Mostly use gas for time & convenience but prefer charcoal.
