What is the appeal of watching Twitch streams?

I keep wanting to check it out, but I don't know the purpose from an entertainment perspective.
Are the dudes amusing or something?

I'll check out PUBG streams every now and then because I like watching talented people play. It gives me ideas on how to better myself.

I watch Previously Recorded only because I like the two personalities from their other work. They mainly talk about other things and not the game and I treat it as a podcast

lately ive been watching, literally, the worst league of legends players in the world play ranked matches.
there is a stream that specifically finds the absolutely lowest elo/match making rating in all of NA and EU, and streams it.
its so fricking funny. they are so so so bad.
so my answer is, the appeal of twitch is it makes me laugh

I watch for different reasons, but admittedly don't watch much anymore because life and whatnot.
One stream I follow routinely plays all the Metal Gear games, always on the highest difficulty, and does insanely indepth story runs and highest-rank (Big Boss) runs. They're incredibly knowledgeable about the series and when I do manage to catch a stream, I usually learn something I didn't know before.
Another streamer I watch is a young dude that plays a lot of older games, so it's fun to see some of the games I grew up playing getting played by a younger person and seeing his point of view.
A third one is a old dude like me. I just relate to him, so that's the fun in it for me.

I watch the ones that do giveaways. That's it. No other reason than free stuff while they get follows and ads and stuff in exchange.
Gotten a BDO pet, several Warframe weapons, some clothing fluff for other games.
If they aren't giving free stuff I ain't hanging around to watch.

People above are giving the same reason as to why I watch it. It's to watch someone play to give me tips and ideas. Sometimes I watch when it's a new game that I am kinda interested in but not sure if I want to buy it. By watching I can tell if I'll enjoy it or not. Also it can be cool if I'm busy working and nothing else is on TV. Just background noise.

It's called entertainment. Plenty of folks out there hate baseball. Plenty of folks have no clue why people get so angry over a little thing like a football game. Just another way to pass the time.
99% of streamers are terrible. It really does require skill to be interesting and funny while playing a game.
By the way, 2 years ago I would have been right with you. Around that point I was looking for some tips and went down the rabbit hole and haven't ever come out.
Oh and I hate twitch. Folks on twitch feel like they need to acknowledge every payment / subscription / comment and that does suck. Takes you out of the game.
End of the day, watching streamers is just another form of content / entertainment. And just like most entertainers, streaming is very hit and miss. Even the good folks stink more than they shine.
Nowadays, I don't even think about buying a game without watching some streams to see if it is worth a play / purchase.
