Tsunami makes this stuff with eggplant and shrimp. (Eggplant miso?) We’ve made it a couple of times.

Thai green curry. If you can get your hands on Mae Ploy brand curry paste, that’s good. In a pinch, the Thai Kitchen green curry paste sold at WalMart will do just fine, along w a can of coconut milk.

The problem I have with the small eggplant is that the skin tends to be very tough. Unless I was trying to do a traditional Asian dish, I'd use the large eggplants.
As I understand it, eggplant was historically a small white fruit/vegetable resembling an egg, hence the name.
