Last Friday, Louisiana bull rider Zach Naegele was competing at the Conley Invitational Bull Ride in Palmetto when the bull's horn cut his neck open causing him to lose over two gallons of blood...

These things crack me up. Blood isn’t measured in US pints ,gallons, etc. I want to know how many units of blood and blood products he got. Units of blood are not uniform and are measured in ml or cc.
But is it possible ? Yes it is, given where he was gored and was bleeding from. And the reason he survived is because any bull riding contest should have an ambulance and trained staff. And a lot of luck!
This is also assuming he is bleeding out blood products he was given after he got to the hospital

Perhaps he was getting transfused and still bleeding during surgeon and he was told by the surgeon he lost 2 gallons over the course of the surgery

Ummm. He could have indeed lost 2 gallons ie we don’t know how much they had to use to replenish before they finished. I’ve seen procedures where the entire body’s volume had to be replaced 1.5 times. So, yes they may have had to use that much blood before they finished.
