You don't need to be in the NFL to recognize a gimmick offense.

Heupel had more success against UGA when he was OC at Mizzou than he does at Tennessee.

Is Mizzou a better college football program than Tennessee? Better players and assistant coaches?

A gimmick offense gets "figured out". That's the difference. Kirby has had time to test out schemes and playcalls which stress an offense which is designed to stress defenses.
