I would not recommend hanging gyp board over existing gyp board and paneling. This makes your electrical outlet/switch situation a pain in the arse. Why not just remove the existing walls and hang new, most of the time you can demo on a sunday and have crew come in on a Monday and hang the new gy...

Probably need to run Terre Boeufs toward Lake Robin or Black Bay depending on what you are looking to catch. I would try to stay as far East as possible from the river. you could possibly run to Oak River Bay, Lake Campo, or Lake Calebasse ...
