If you like the matchup for all 3 pitchers, leave them all in the lineup. You will get the stats for all 3.

If there is no s next to a batter's name, does that mean he is for sure not starting?

The s means he is in the starting line up. If there is no s it could mean that no line ups have been announced yet. You won't know for sure until right before game time I think
