Everyone wants to blame Chavis, but maybe our guys arent that tough?

I don't think strength and conditioning is really the issue. Sumlin decides what he wants, and LJ is in charge of making it happen. From what I can tell, he has provided whatever KS has asked for.
I think toughness comes from the personalities you recruit, and the program culture. A&M is a very friendly and comfortable place and it permeates the AD as well. Overall it's distinctly a positive and one of the best parts of aggieland, but I think there is great value in self assessment and awareness.
We also probably overcorrected in recruiting to compensate for Claiborne and Golden.

Strength and Conditioning is an easy excuse imo. The real problem is Texas A&M ranked 1st in defensive snaps. When your defense is on the field longer than everyone else, you will not play a great 4 quarters. No chance. Why is the defense on the field so long? We suck at 3rd downs and we throw too many god damn screen passes. Also our running game seemed to decline throughout the season. Time of possession has to be more important to our offense. Most of the time we score, we do it on a huge play that puts the defense back on the field. We need more sustained drives that eat up some clock.
This has been my issue since 2014. When everyone was calling for Snyder's job, it was Spav that needed to go.

The defense has more control over the number of snaps they see than the offense. If we could stop teams from running the football before the redzone...

That may be true, but the offense isn't doing them any favors. 3Q of the Ole Miss game is the perfect example.

I mean I certainly agree that our lack of offensive consistency contributed. We were boom/bust on both sides of the ball all year. We were at the top of the turnovers list, and explosive plays but that was about it.
To me, that says we have guys that can play and make things happen, but they aren't being put in positions to succeed on a consistent basis...
Why that is the case stems from 100+ different things, but the responsibility for it is a shorter list.

Chavis called some really bad plays this year. Our defensive line was the strength of our team. They defensive line would get opponents to 3rd and long and then he would remove a defensive lineman from the formation and play 3 down lineman.
1) You take one of the better players off the field and replace them with a player who doesn't have very many snaps and obviously wasn't "good enough" to get into the starting rotation.
2) We take away the pass/run rush that got you to 3rd down in the first place and gave the opposing OL an additional free pass blocker.
3) You put an additional CB on the field which was A&M's weakest and least experienced position group on defense.

Our DTs don't really generate much pass rush, so I don't think it's bad to take them off the field in 3rd and long.
What is bad is our Linebackers not being able to keep track of the RB coming out of the backfield. And not being able to deal with a mobile QB.
And playing Alex Sezer so much, which is the result of our numerous failures with DB recruiting in 2015/2016 classes

Because he sucks. Tennessee and LSU are happy he's no longer their coach. Pretty sure there's a good reason.

Really? LSU? Every coordinator is tier 1 caliber until they fire him. They absolutely only started knocking Chavis once he was gone. Before that he was incredible according to them.
