You must didn't watch Dak's senior year? That wasn't your typical Mullen offense. That was all about developing Dak.

College coach's jobs are not to develop you for offenses that they dont even know which one exactly you're going to in the NFL. Their job is to get what they can out of you in college, to win games with you in college. The idea is you want to play to the strength's of your QB.

Mullen had zero clue what offense Dak would go to in the NFL, he wasn't developing him for whatever offense Dallas would run with him because he had no idea where he would go his senior year. Dak's passing ability developed over time so he got to throw the football more and more. Why run your QB on designed plays so much when the risk for injury is so great and they're plenty good enough throwing the ball? Hence more throws for Dak his senior season.

Canada got way more volume out of Harnish his 1 year with him:

Harnish junior season
189 for 292; 2,530 yards; 8.7 ypa; 21 TD, 5 INT
137 att; 837 yards; 6.1 ypa; 7 TD

Harnish senior season
237 for 384; 3,216 yards; 8.4 ypa; 28 TD, 6 INT
194 att; 1,379 yards; 7.1 ypa, 11 TD

14 games both seasons, Harnish was good his junior year but not NEARLY as impactful his senior year with Canada.

Mullen runs a run first spread. That is what he ran when State was ranked #1 and that's what he ran with Fitzgerald. In 2015, State fans has never seen a pass first spread. It was due to building Dak for the NFL and lack of viable backs. Mullen didn't know what team Dak was going to but he know that the NFL is a passing league.

He threw more and more because he got better at it, really that's the exact reason. Had nothing to with "preparing him for the NFL". Certainly a by-product of throwing it more is more what they do in the NFL, but if he was actually trying to prep him for the NFL, guess what, he would have been taking snaps under center too, because that's by far the biggest adjustment shotgun QBs have to make going to the NFL.

Again, college coaches are not getting you ready to play in some offense they dont even know where you're going. They are prepping you to play in their offense, and produce as best as you can now in that offense. Sure, some college offenses can be similar to some NFL offenses, but again, those coaches aren't prepping you for some specific offense you're going to after theirs, they are putting you (or are supposed to be) in an offense that suits you best for your skillset now.

They didn't have a viable back or offensive line in 2015. If Josh Robinson came back then it would be quiet like 2015. Of course, Dak got better at throwing the ball. Thats called progression. Dak said that Mullen offense was very similar to the Cowboys offense. He was talking about 2016 style offense.

Lots of offenses can be similar to pro offenses, again, this doesn't mean the COLLEGE coach is literally prepping the player for the NFL. They are trying to run an offense to best suit their personnel, period. If Mullen was actually attempting to really rep Dak for the NFL as best he could, he would have put him under center some too, but he didn't. Mullen was just using his personnel to his situation best he could. Dak got better passing over time, so he let him throw it more. Which is also a lot safer than running your QB 15 times a game.

Mullen was playing his strongest hand not trying any NFL development nonsense Dak's senior year. If any head coach spends his efforts doing NFL prep instead of winning games his arse need running off immediately.

Absolutely he is. We only have 3 scholarship QBs next year.

Plus Bohanon would be a nightmare at WR with his size and speed.
