Well I mean they only get to pick 2 times, their first game and the Semi game. It would be pretty simple. They also do it in the Regionals, the 1 seed picks when they want to play their opener, but it is only 4 teams and 2 games daily, which is not that hard to schedule.

If I was the highest seed I would play the early game.

We could do Pool Play.

Pool 1
1
12
8

Pool 2
2
11
7

Pool 3
3
10
6

Pool 4
4
9
5

Play the team in your Pool. The teams that go 2-0 advance. If everyone goes 1-1 then highest seed or biggest run differenial or in season H2H or something splits the tie. 4 winners play a single elim tourney. Every team gets at least 2 games. Most games played is 4.

Or you could do 3 Pools. Take the 3 winners plus 1 WC and do a single elim tourney. Everyone gets at least 3 games. 2 teams will play 5 games.

Do a 12 team tourney. Top 4 teams get byes. Losers in the first 2 rounds play a consilation bracket to get more games in. If you lose in the Semis then you're done. Min games played would be 2 for the teams with byes that lose in the semis. Max games out be 5 for the teams that win in round 1, lose in round 2, then make the finals in the consilation tourney.

I hate pool play like for a championships but it guarantees games and does give teams "mulligans" and usually best teams come out of pools

It's less exciting for sure, but I look at the conference tourney as a way to prepare for regionals and put on a show of great teams. The auto bid isn't important for the SEC.
