Tennessee's Jordan Williams (DT) signed with the Jets.

This one is a happy surprise, imo. Jordan spent almost all of his college career as a 'meh' DE and OLB. However, before the start of last season, he was asked to bulk up and play DT (most remember that we had to rebuild our entire OL but have forgotten that we also had to rebuild our entire DL last season too -- the only team in CFB forced to rebuild BOTH the entire OL and DL). The lack of depth at DT that caused the switch turned out to be a very good thing for Williams as even though he was undersized for a DT he ended up being a very good player for us.

I don't think he'd have made any team had he not switched to DT last season. And since he only has one season of experience at the position, I think he definitely has a lot of room to develop into a solid player in the pros.
