So what are the actual rules on this? Do the number of losses even matter if the conference wins are equal? If UF is 6-1 and UT is 6-2, they both have the same number of wins and UT would win the head to head tie breaker.

To me this hurts LSU more if LSU refuses to reschedule. If LSU wins out (including a win over UF), they are the West champions (assuming AU loses another conference game). With no UF game, LSU would be 6-1 and Bama would be 7-1 and LSU would lose the West even with the head to head win over Bama.

It goes by SEC winning percentage, so if Florida and LSU win out:
Florida would be East champs with one loss (assuming Tenn loses 2)
Alabama would win west if only loss is to LSU (would be 7-1 as opposed to LSU's 6-1)

Obviously big hypotheticals but yes cancelling this game absolutely benefits Florida and absolutely hurts LSU.

However this game had to be postponed and I agree with the decision.

If LSU does win out, it definitely hurts LSU more.

I don't think LSU is winning out, but that's beside the point. I just hope the playoff committee is watching this, and takes that into consideration when they're voting.
