I'm really not trying to be a smartass here, but based off of a game against a pretty bad Georgia Southern offense? Auburn had some pretty good defenses in the early-mid 2000s.

notwithstanding stats against the Citadel because I can't find them, the 2004 defense's best outing was against Kentucky, leaving them at 110 total yards. That's with Louisiana-Monroe and Louisiana Tech also on the schedule

Tennessee had to play that 4 headed monster chop block triple/quadruple option attack.

There D stats will improve over the season. Opposite UGA that has to face it at the end of the season will have their stats worsen. Playing a team like Ga.I.Tech. does not give a real indication of how good a D a team has.

LSU's D held BYU to only 38 offensive plays, the lowest on that list.

ETA: surprised Penn State is out of the top 10. Didn't watch the game but the talking heads were creaming over their D Tuesday morning on CFB Sirius XM

GT does have the #1 rushing offense. I'm sure some will say that's because UT defense sucks. But after just one game, couldn't that be said about every teams rankings?

GIT, USAF, Army, Navy all run that O. I think I heard Paul Johnson say that regardless of who is on the backfield, the B-back in the O, every year, has 1,000 yards rushing by season's end.
