Herman is unproven at P5 level, plus you get a new staff that then has to figure errthing out including recruiting. You take a step back first season from that in the best scenerio.

O is seamless, already has the D and DC worked out, and wants to hire a good OC (Kiffen). Really the right fit for the swamp kittens

Orgeron already almost beat Saban in his first year. It was a great hire to restore order with LSU at the top.
