It really was amazing, I've seen a million helmets go flying off, but that time the helmet flew straight up in the air like 10 yards.

They used to teach the defense to break down (bend knees), center their eyes just under the man's chin, make contact then drive up with your legs. They don't anymore because of rule changes regarding personal fouls (spearing). That used to happen a lot...it was a point of pride to see how far you could make a helmet go.
