OU/UT has been interesting since I spent some time in the DFW area... and UT/TAMU for that matter.
The ACC/SEC games have always been fun to watch... SC/CU, UF/FSU, GT/UGA... seems like the SEC teams have had the upper hand the last few years.

Back in the early 2000's, FSU-Miami since it was pretty damn close to an NFL game and always came down to the wire. I feel similarly about the LSU-Bama games recently (even though it's not a real rivalry)
