I'm wondering why LSU fans turn into Bama cheerleaders every year when they play A&M.

I mean I generally don't like them and hope they lose every game. I'm not actively going to root against them or care when them losing doesn't matter though.
It's a shame really. The campus and students are fine and it seems like a cool place. The thousands of T-shirt fans that have never stepped foot on the campus or been to a game that wear their stuff or yell roll tide is what makes them insufferable.

It's simple really. lsu believes aTm is going to usurp them as being the ones that lick the sweat from bamas balls.
They don't realize aTm doesn't really give a shite and like pushing the envelope anyway.

I haven't seen a single LSU fan say they are rooting for Bama to beat A&M,

There was a time when all of South Mississippi (my old stomping grounds) latched onto LSU. Not many of them stepped foot onto the LSU campus.
That was after the vast majority of them became Auburn fans in the eighties.
Now it's Alabama on top--for an extended period of time. This notion that this is somehow unique to Alabama is tiresome.
For now, we're the best. Deal with it.

One reason I can think of is they don't want to hear how great A&M is for what's going on 5 years later after a single signature win, all the while A&M failing to ever finish higher than third in the sec west.

A&M has yet to beat LSU since they have joined the SEC. They aren't relevant by the end of the season. They will have three conference losses by the time it's over.

Not true. I hope Bama loses to LSU, and anyone else unless it helps LSU, but I want Ole Miss to lose more so I actively root for Bama at least once per year.
