Well I mean in general Columbia isn't a college town. I would think that visiting fans hang around the Vista or Five Points though, and those areas of Columbia feel like a college town. It's when you get past Five Points and past the Vista where you realize Columbia is a lot bigger than that and therefore not a college town.
I'm surprised to hear you say that about Manhattan. I've been there (it was a while ago) and to me it felt like it was K-State and nothing else.

Next time you make it to Columbia, go visit the Salty Nut, Village, Pavs and you'll get a better feel for it. Honestly would put Salty Nut on Fridays before a big game up against any place in the SEC.

Columbia seems like it would be a nice place for an away game, problem is that I'm a Georgia fan, and South Carolina fans hate Georgia fans and treat us like shite. Ruins the whole experience.

I feel the same in Athens, but that never stopped me from having a good time there. You should make the trip next time. Some UGA fans from this board have actually stopped by my tailgate in the past.

Not sure what the dilemma is based on how you explained things in the OP, but if I were you, I'd go to Kentucky. If you have the time, make it a road trip and hit cool spots on the way based on your other interests. I'd definitely go through the bourbon spots in Kentucky, maybe hit Lynchburg for the Jack Daniels tour, catch a Predators game in Nashville, and/or stop in Chattanooga for any number of the tourist attractions if that's your thing, or all of the microbreweries and/or the TN Stillhouse currently being built on the riverfront. You can plan the trip however you want, but there are tons of cool things to do along the way. Of course, just going to the place where you've had fun before is a good option, and hitting the links and/or Charleston would only sweeten the pot.

For gameday experience, easily South Carolina. Kentucky is bad and Mizzou's has been embarassing the past couple years.
