Post pics when they are done! I still have about 45 linear feet of welding on my insulated smoker to finish, but should have her finished by TSIO.

I replaced my relatively high dollar horizontal flow smoker with a "Big Ugly Drum" smoker a few years ago (basically a food grade 55 gal drum burned out good then turned into a direct heat smoker). Best decision ever, you get some of the fat dripping on fire taste from a direct heat smoker but incredible temperature control and enough distance that there are no flame ups and space for 6 butts.

Yeah...gotta post finished pics.

I feel like if you are getting adequate smoke with the right wood (Mesquite's too conventional, use a fruit wood like cherry, fig or apple), and can maintain it around 200 degrees...keep a moist environment in the smoker..that the kind of smoker you are using doesn't matter a whole lot...after that, it's all seasoning.

Have tried with and w/o mustard and don't really see a difference...Bad Byron's Butt Rub, plus olive oil and some coffee grounds will get some of the best tasting bark you've ever encountered. Damn I wish I had done that today.

Yeah, usually I'm the same but I'm trying something different today. I trimmed her up good and am going to keep her mopped all day. She should finish up around 5

I took two hams off the smoker last night around 10. First round of ribs went on about 30 minutes ago. Don't have pictures of those of course, but here's the last ribs I smoked.

They start covered in a beer bath for 1.5 hours. Finish with a homemade Carolina-style mustard sauce.

Have a brisket on the Green Egg. Just got it rolling this morning. Definitely a perk to not playing ubtil 9 PM.

I dunno, some people say that it is gross. i can think of certain circumstances where it would not be that bad though...
