SC Commission Cup BBQ Festival (This Saturday)

This Saturday, at the State Farmer's Market, 11 a.m. to 3 p.m.
Cash prizes for BBQ, winners can qualify for national cookoffs. Popular vote is used in several of the categories.
Live Music - Going Commando
Easter Bunny and that type of stuff there as well.
Sampling plates are $5, kids under 12 are free If you bring 3 canned goods for Harvest Hope.

I wish I could make it up there for that. I don't care what kind of sauce, it's all good to me. I'd probably need a DD so I could sleep riding home.

I brought that mustard based sauce with me to the KC, and people can't get enough of it. The rest of the country doesn't know what it's missing.

Maurice's is the shite. He was a racist, but he made a damn good sauce.
I love the mustard, but my favorite is NC Style Vinegar based. Shoot me down if you want to, but that stuff is amazing.

I like it too, but I can only tolerate so much vinegar. It's an issue called gustatory sweating. I like similar sauces on my brisket with some spice to them.
I am not a fan of the super sweet BBQ sauces. I like my ribs Memphis style.
Yep. I make a Carolina Gold sauce much like Maurice's for pulled pork. It's simply the best IMO.

To me the key to Carolina BBQ is cooking the whole hog. They cook just the shoulder here in Savannah. No where near as good no matter what sauce you put on it. I bet the hash was awesome also.
