So what exactly is "American" ancestry? America is only 239 years old. Native American?

Do not know their ancestry or don't care or are too mixed among different Europeans/Native American to list them or for whatever reason just consider themselves American

For some reason southern white people seem to be more "mixed" ancestry of different European nations. That's probably why..they don't have 1 main ancestry to relate to.
For example I'm Irish, Italian, Scottish, and French. I can' claim one over the other so I would just say "american".

Most people that refer to themselves as American are probably the groups that came prior to the mid 1850s. The early English and scotch-Irish peoples have been here long enough to lose much of their association with the old country. And many have bloodlines that fought in the Revolutionary War. They are American.
Newer groups like the Irish in the 1850s, and Italians in the early 1900s, still have attachment to their prior countries.

I assume it's those angry redneck types who say "I'M AN AMERICAN!" whenever you ask them about themselves in an attempt to make polite small talk.
I usually take that to mean that they're of low birth and/or questionable parentage.
