Is this including opponents that ended the season as ranked opponents or just when they played them?

It all depends on what you want to see. As a historical look, I prefer the historical measure.

It definitely includes this season.

Before this year Mullen had 1 win against a ranked opponent: Ole Miss in 2009.

He has 2 this season in LSU and Auburn. That equals 3.

It's through November 21 and includes all three from this year.
