I've always had Clemson people throw that out there as a slap at USC, but isn't that more a slight to Clemson (and CofC, Wofford, Furman, etc.) than Carolina?

It's a Simpson's line. It's an insult towards everyone and everything.
So yes, it's an insult to USCe, Clemson, the State of South Carolina, America, me and you.

The only SEC related Simpsons I remember was when they went to Knoxville and later knocked over the Sunsphere.

I try to stick with Texas whiskeys for patriotic reasons, but they're for the most part average compared to real bourbon. But RC is actually pretty damn good, was the first distillery in Texas, and was founded by an Aggie.
I recommend it if you're looking for a mid-grade bourbon.

That's what I was thinking, but it doesn't actually say it's bourbon. If it was Rebecca Creek Texas Straight Bourbon I'd trust it more.
But as it just says it's 'whiskey' with no explanation, I'm thinking they've done some strange mixing, like throwing Vodka or something into the mix.
I want to believe, but I'm leery.

Don't blame you. The Texas whiskey industry is old, but unrefined. I like RC, but if you're looking for something dependable I'd look elsewhere unless you're feeling adventurous. Texas is a vodka state, unfortunately.
