How do we go from beating Oklahoma State and Alabama, to losing to Jacksonville State, and then beating Xavier?
Is it normal for college baseball teams of have off night where they're capable of being beaten by middle-of-the-road teams?

It happens to the best of pro teams. Someone called it and usually falls at the feet of pitching, but there are times a teams offense is dormant for whatever reason.

Looking back on Vanderbilt's season last year...
In late Februrary they lost to Western Kentucky and Evansville. I'm assuming neither of those teams are that good, yet they lost...or they both might be pretty legit, and them beating Vandy is no surprise.

Aka It takes roughly 80 games in the mlb to know who the top few teams are barring injury and freak outliers
