We obviously rotate a bunch of players on the DL. The benefits of this i presume are: keeping guys fresh, orienting certain personnel against the opponents personnel in certain situations, and getting younger guys experience and game ready.

If all that is true, then why don't teams rotate OL players in the same way?

An OL is a group acting as one entity. They have to know what the other is doing based on past experience. If it were all run blocking you could do more of what you are asking. But familiarity with the QB and each other are quite vital.

Offensive lines have to develop a chemistry and work together to make the correct read, etc. (similar to Hockey is one example I have heard). The D-line is more about effort.

I think OL play depends more on continuity and rhythm. The QB gets used to certain OL and knows what to expect from each one.

i imagine it has to do with cohesiveness of the OL as a whole... both in pass protection and run blocking.

DL really isn't like that... they run stunts and blitzes and stuff, but it's not to the level of complexity.

DLmen usually work in pairs to do stunts and certain rush lanes.

OL is one group...and they honestly dont cover as much ground as DL do.

Also, playing OL is not as physically demanding as playing DL. Don't get me wrong, it's tough, but you aren't running down plays as much.
