I've gotten to where I'll just get 3.5 lbs of beef tenderloin, tie it up, coat with olive oil. To make the crust I use salt, pepper and Montreal seasoning. Coat with that. Sear 2 minutes a side. Basically rolling it every 2 minutes. Then put on the indirect side of the Primo with a temperature probe until it reaches desired doneness. Medium rare at the most. Easy as hell to cook. Put it on a plate and rest for 5-10 minutes. Plate is dry when it's on there, but when you cut into it. ..sploosh. . Juices gone wild.

This is way easier for me than trying to grill my wife's filet, my ribeye, and the kid's thinner steaks how they want them. Tastes way better and costs about the same as getting the other 4 steaks cut.

Did y'all realize that Gary Yamamoto is one of the largest producers of wagyu beef in the US? Those who bass fish will know his name.

Did you see the Clarion Ledger front page today about the former CMMC? Dayum. Remind me to save the last round for myself if I'm ever threatened with being carted there in the meat wagon.

There is only one facility in Jackson I would want to be taken to if I had legit trauma. Why go somewhere that isn't used to seeing the worst on a day to day basis?

Agreed. Plus, if you show up in some sort of grave, unexplainable condition but make it through the night you'll be looked at by 20 doctors the next day.
