I actually have had true Japanese Wagyu (A10) and American Wagyu and I prefer the grassfed American Wagyu over the true Japanese Wagyu if you are looking for a true American style steak. The reason being is it is so dagum rich....like eating a stick of beef flavored butter rich. That being said I do think it really shines as a tartar, carpaccio or shabu shabu style. Now if I want a true American style steak with a traditional steakhouse char I want at least a 2 inch cut with a decent marble (USDA Prime). I used to be a strictly "rare" guy but unfortunately as I have gotten older I have found that it can cause me some unfortunate gastric distress (read that as "oh holy hell I am going to shart myself as I waddle to the nearest head with my butt-cheeks pinched type of distress....so now I am a "medium rare to the rare" or sometimes referred as "rare +" side guy).

I've never had Japanese Wagyu since I'm poor, but I can't imagine it being better than American grass fed.

Have you had beef carpaccio? You're wild

I'd try it though. Finally get to use my Gall bladder I guess.

Don't get me wrong it's not like splurge on Wagyu often because one steak will set you back ~$175 - $200. I usually reserve it for when I a "wining & dining" a client. I would suggest doing it once just to say you have done it though. The last time I had some we did an experiment. We ordered Wagyu tartar & carpaccio appetizers and then for entrees we all ordered a dry aged USDA prime steak (mine was a bone in ribeye) plus a Wagyu strip for the table. The unanimous consensus was the Wagyu steak was good, but way too rich as a full entree. So everyone preferred the traditional American steak with the Wagyu appetizers where the flavor & fat marbling really was enhanced with the preparation but in such a quantity that it didn't overwhelm you.

You have me wanting to try carpraccio now. I've seen it and not known what it was up until about two years ago.

What is your "daily" steak?

I like porterhouse on the weekends or when company is over, but Chuck Eye was cheaper than ground beef 2 weeks ago and Kroger gave me the full cut, 4 steaks, 1.5 inches thick for $5 per lb.. I ususlly eat that in wraps, salads, etc but these filleted out rather nicely and tasted very close to a good ribeye for 1/2 the price.

My go to is a bone-in ribeye followed closely by a strip. However, Mrs ABears is a fillet fan so I often have gotten a porterhouse and she gets the fillet and I eat the strip. As for every day I like to have top sirloin, London Broil, hanger or well marbled skirt steak. Anyone of them graded as choice or prime and seasoned right will be great (the better grades of meat have better marbling and fat is the flavor.....thank God for statins!). I recently took a well marbled ribeye "pare froze' and sliced it deli thin, seasoned with kosher salt/fresh ground pepper and cooked it stove top on a 18" cast iron pizza pan along with sweet peppers and onions...topped off with some provolone cheese....one of the best cheesesteaks I have ever had.

Add in the factors of a road game, weather and one of the absolute shite storm performances I have ever seen an offense have, lead to a Hawg feeding frenzy. We got to have a rushing attack to compete in the late fall or compensate when the passing game just isn't clicking!

Checked out Rafters tonight. Great food and beer variety. Open space and live music. Their chef knows his creole. They got fried gator (which we will be eating this year). That place will compete with The Library, but in my book the mechanical bull at The Library will prevail.

Legit question: If Ole Miss fans are "such pompous, insufferable wannabe thirty thousandaires" as per the Whackadoodle board....why do the State brethren come hangout & post on our board? Personally, I like State fans. We are all from Mississippi! We Landmassians got to stand together and beat off the coonass, Walmart, Faggies etc....fans!
