I love pork skins and have for as long as I can remember. I also ate chitterlings when I was younger. As for my reason for for not buying the hot ones, I just don't like the flavor. Would rather mix up my own flavor and get the heat just the way I like it.
Could be a younger vs older thing to. I notice younger folks prefer artificial synthetic flavors to the real thing. Love real vanilla because it is what I grew up with but I hate the fake stuff now in coffee and ice cream.

It's cool if you do not like fried chicken and grits, most of what folks like they develop in childhood. I don't get Pinterest and a bit surprised it moves your needle as most I know who like it are 40 - 60 year old women who do craft work and have cats.

Chitlins are nothing but pig shite right after it leaves the pig's stomach. Ask anyone who cooks them, and they will tell you that while cooking them, the whole house stinks. I would never eat them but to each their own. My mom had a best friend that used to eat fried brains and eggs together at breakfast.

My great aunt cooked 'em for my family one time on the very rare occasion we visited her (she lived on the east coast).
I was a kid. Still vividly remember how the smell turned my stomach. Not touching that shite. Ever
