Have fun with that. Cleaning and gutting those things is disgusting. Did it once and will never do it again.

Got the pit ready and just started a fire. Gonna feed the whole company tomorrow. Also reset the trap there are at least 3 large groups of hogs out there at that place tearing shite up, we are gonna try and get em all. Won't last long before more move in but hey it's fun chasing em.

The mustard based sauce they have up there is ok, but you know I don't put sauce on bbq.

Throw it on the spit or smoker and low and slow is the only way to do it.
When Prepping it have a good marinade or seasoning/rub and go with it.
Slice it and put it on a bun to eat it. or slice and eat alone with beans.
Sweet Tea to wash it down and we got ourselves a winner.
What I do is combo Memphis and Texas styles. Slow smoke brisket or pork. Slice thick, add coleslaw and some sweet tangy sauce to it on a bun and have fries or potato salad as a side.

How long does it take you to skin and gut? I have never butchered a hog before.

Two of us skinned and gutted 7 in about an hour and a half. the biggest was 65 lbs and the smallest was around 12 lbs or so

How many blades do you guys use? I would think 3; one to skin, one to cut, and one to gut.

I don't know if feral hogs are pack/herd animals but if they are you may consider putting a microchip in a couple that you catch and releasing them. If they are herd type animals they will return back to larger groups and you can track the herds and slaughter the hell out of them. Same concept as the Judas Goat method that was used to remove the out of control goat population in the Galapagos Island.
I know that the real definition for a Judas Goat is associated with tricking sheep, cattle, etc.
