Both are good. Hoss's will be more expensive, but also have more options. It's a little more upscale. Smokin Chik's is awesome, and Chick Orcheln does a fantastic job. He's a great guy. It'll be affordable, and very good quality. I used both for catering different things, but for a tailgate I'd probably go with Chick's.
Not in Columbia, and it looks like you're stuck with "preferred caterers" for the event, but best bbq in the area, without a doubt (IMO of course), is Lonnie Rays. He does catering as well. Guy operates out of a glorified trailer that's falling in; what else do you need to know!
