Try placing a bowl of fresh coffee grinds inside truck. I have heard that truck drivers swear by this to rid their trucks of smells from hauling things like seafood.

I did this with a car we got for one of my kids that the previous owner had smoked in. Put coffee on floorboard, run heater for like 10 minutes, the ac for 10 minutes. Knocked it way back. You can get a faint smell every once in a while, but it is way better than it was.
