2012 UGA started many future NFL draft picks but finished 77th in rushing defense. By no means was that defense great. With better coaching, Georgia might have had 2011 LSU or Alabama-like defense and actually have won the SEC Championship.
Also, your argument can be turned against you. Georgia has been to the SEC Championship 3 times since they last won it. Does that mean that Georgia hasn't had the defense to win championship s since 2005?
