People that pronounce it Ar-Kansas in front of you...

what do you do? If we're in person I give them a "c'mon man" look and laugh.
If it's over the phone and I kind of do a "no, no, no, no" it's Arrre-can-saaaww. and usually a "get it together buddy" comment.

on a flight from houston a few months ago a whole family (i mean like 4 sons and parents) of aggie fans were surrounding me. one of the sons (the oldest who i would estimate was 12-13) said ar-kansas. he was sitting right behind me and i wanted to turn around and punch him in the mouth. his father told him to shut up so he took care of it for me.

This. But I usually just keep as straight a face as I can and say, "You know, we were a state before Kansas, so you really should call them Kansaw."
My earnestness usually takes the wind out of their sails. If only I could have "The More You Know" music play in the background after I say it!

I always tell them it's not our fault Kansas and the other idiots don't know how to pronounce their damn name.

I can't believe they'd go against the wishes of the state:
Arkansas Code 1-4-105: Pronunciation of state name
"Whereas, confusion of practice has arisen in the pronunciation of the name of our state and it is deemed important that the true pronunciation should be determined for use in oral official proceedings.

Be it therefore resolved by both houses of the General Assembly, that the only true pronunciation of the name of the state, in the opinion of this body, is that received by the French from the native Indians and committed to writing in the French word representing the sound. It should be pronounced in three (3) syllables, with the final "s" silent, the "a" in each syllable with the Italian sound, and the accent on the first and last syllables. The pronunciation with the accent on the second syllable with the sound of "a" in "man" and the sounding of the terminal "s" is an innovation to be discouraged."
This gets bandied about often as "it's against the law to mispronounce Arkansas in Arkansas," but the reality is this is just a clarification.

I live in Baton Rouge, so I always get that from people who are from here or somewhere else in the state. I just give the Lousy-ana thing back to them.

Exactly how I go about it. I straight-faced, all academic like say "Well actually that other state should be pronounced 'Kan-saw'. You see we became a state in 1836 after divesting itself of all the parts we didn't want which included modern day Oklahoma. We then took the name of the local Indian population. The early European explorers ascribed their tribes a spelling that ends in an 'S'. In 1850 that other state came along. In an attempt to emulate us they cut the best two letters off our name, mis-pronounced the rest, and became 'Kansas'. They weren't intelligent enough to understand the pronunciation."
It normally leaves the person not wanting to go any farther.

Pretty much everything about this post is incorrect, but if it shuts the person up then by all means.
