Armando al Pantheon is excellent. It is in a very touristy area, but don’t be fooled, it is the real deal for Roman classics.

Piperno is kind of a ritzier version of Armando. Traditional Roman menu.

Went earlier this summer on a three country tour. These recommendations are from our tourguide, who was born in Britian.

Il Vero Alfredo - said to be the best Alfredo Sauce in Rome. Owner's wife took sick and could not eat regular Alfredo Sauce, so he reformulated and got swamped with customers and copycats. Reservations easy to get and recommended. Piazza Augusto Imperatore, 30, 00186 Roma, RM

Della Palma said to have the best Gelato in Rome. Via della Maddalena, 19-23, 00186 Roma RM

The above I went to and can verify. Below are recommendations we did not try:

Layaline - Ristorante Libanese (Arabic)
