I'm coming down in May and was going to stop at Jerry Lee's and get as much biudin as my 2 ice chest will hold but we are just passing through and was wondering how long I could keep it on ice before having to be frozen

It should be just like leftovers in your fridge. I’d be fine keeping it on ice for 4 days or possibly longer.

as long as it stays cold its good for several days

the issue it using big freezer ziplock bags to keep the ice water out and keep the drain open, or you may as well throw it away

Buy it frozen and pack with dry ice. Should stay rock solid in a sealed cooler for a couple of days.
